Amazing Veggie Burger Recipes for Summertime

I spend A LOT of time scouring the internet for easy recipes that are healthy and delicious. And now that summer is here, I’m thinking a lot about burger recipes. Burgers are a summertime favorite and something that I crave most when the warmer weather hits. But I’m a vegetarian, and I’ve heard from a lot of you that you don’t eat red meat or are trying to eat less. Thankfully, veggie burgers are easy to make and so tasty and satisfying!

The following list includes a few of the best veggie burgers that I’ve found. These are so much better than the store-bought frozen patties, and are only a little work. They are big, hearty, and filling, and perfect for your next barbecue. None of them are trying to be a meat dish, so you won’t find any meat substitutes with funny ingredients here. Grilled or baked, enjoy them on a bun with all the usual toppings. Or, skip the bun. These deliciously flavorful burgers can stand alone or on top of a salad.

These are 5 of my favorite veggie burgers on the internet. Filled with vegetables and plant-based proteins, such as lentils, black beans, chickpeas, and quinoa, these burgers are fiber and nutrient-rich, and full of protein. Ready for a yummy burger that even meat-eaters will love?

  1. Spicy Tofu Burgers. Crumbled tofu with fresh herbs and sriracha, these veggie burgers are spicy and satisfying. Recipe from Pinch of Yum. *I replaced the lemongrass paste with some lemon zest as suggested in the comments.

  2. Smoky Black Bean Beet Burgers. With a combination of beets, mushrooms, black beans, and walnuts these are amazing. And the beets give them a beautiful red color. Recipe from Minimalist Baker. *I cooked these on a baking sheet as they would not have survived intact on a grill grate.

  3. Vegan Lentil Mushroom Burgers. This savory veggie burger is a protein powerhouse with a combination of lentils and oats. Recipe from Oh My Veggies. *When I’m in a hurry and want to make these, I grab a package of pre-cooked lentils from Trader Joe’s and these quick and easy burgers are even quicker and easier!

  4. Sweet Potato Black Bean Burger. I love sweet potatoes and the flavor comes through in this delicious burger. You’ll want to make a lot - these are a family favorite. Recipe from Minimalist Baker. *I like to cook the rice and sweet potatoes ahead of time and then these come together so quickly.

  5. Spicy Chickpea Veggie Burgers. We were a little skeptical about the peanut butter in this recipe but it really works! These are delicious and so easy. Recipe from Running on Real Food. *I use my food processor to grate the zucchini and mash the chickpeas and these are ready to cook in less than 10 minutes.
