Mixed Greens and Citrus Salad with Avocado, Olives and Pumpkin Seeds

This colorful Mixed Greens and Citrus Salad makes the most of the wonderful citrus that's in season right now. It is delicious, nutritious, easy, and quick - coming together in just a few minutes. The briny saltiness of the olives is the perfect partner to the juicy, tart citrus. Then the creamy avocado and the crunchy, roasted pumpkin seeds add texture to the amazing flavors. Drizzled with a simple vinaigrette, it’s the perfect refreshing side to serve with heavy winter meals or on its own for a light lunch.


This salad doesn’t have a recipe - just a list of healthy ingredients that when combined make a delicious salad that is light, tart, salty, and sweet and is sure to brighten your day.


Here’s how you can put it together:

  1. Grab some heaping handfuls of salad greens and put them in a salad bowl.

  2. Peel and slice a few clementines or any kind of orange. Add them to the bowl.

  3. Peel and slice a ruby red grapefruit. Add it to the bowl.

  4. Add some olives. (I used some from an olive mix I had from the grocery store.)

  5. Add a peeled and chopped avocado.

  6. Sprinkle with toasted pumpkin seeds.

  7. Toss with a vinaigrette. (My go-to vinaigrette is a mix of Dijon mustard, balsamic vinegar, a little bit of avocado oil, a splash of water, and some salt. Any homemade or store-bought vinaigrette would work great.)
